Chicken Pot Pie!

Ingredients:
3 T. butter
2 onions (I leave this out)
1/3 c. flour
3 c. hot broth
1/2 t. thyme
1/1 t. salt
1/2 t pepper
2 c. diced cooked carrots
1 1/2 c. cooked broccoli florettes
1 1/2 c. cooked potatoes
1 c. cooked peas
4 c. cooked chicken
2 pkg pie crust
Instructions:
Heat oven to 425. in lrg skillet, melt butter. Add onions and saute until done. Whisk in flour. Add broth and heat to boiling. Reduce heat and simmer to thicken. Add spices. Remove from heat and add vegetables and chicken. Prepare pie crusts. Put half mixture in each. Top with crust and bake 20-25 minutes or until done.
Notes: I recommend precooking your veggies. I precook all my veggies in my pampered chef steamer in the microwave. You can also precook them on the stove in one big pot.
